It’s hard to resist – the sweet crustacean is simply cooked, topping al dente spaghetti that’s stirred through a beautifully rich tomato sauce amped up with butter. Effortless and fabulous. Those two words could be used to describe Frat Paz in general. It’s an institution. A long lunch hot spot. A destination unlike any other in Sydney. Yes, the people-watching enhances the experience, but when the kitchen is firing, it’s also one of the city’s great dining spots. While most start with the crisp fried calamari, the ascolane (stuffed fried olives) should be considered equally essential. As is a glass of something Italian from the excellent vino list overseen by wine director Caitlyn Rees. For those who chase the carbs, chef Trisha Greentree’s “dirty pasta” – a mashup of all’amatriciana and carbonara – is lush, while her veal saltimbocca, served on the bone, is juicy and satisfying. Good to know: Brothers Gio and Enrico Paradiso also own spin-off wine bar Paradise, and have just opened Caffe Paradiso nearby.Good Food reviews are booked anonymously and paid independently.
