So it’s a surprise to find chef-restaurateur Orazio d’Elia’s new trattoria in Rushcutters Bay doesn’t serve a single slice. Instead, the menu draws on regional specialities from across Italy, from tortelli Milanese bundled with braised osso buco ragu to cannelloncini alla Fiorentina, pasta tubes filled with spinach and ricotta and baked in bechamel. It’s also the only place in town serving ’ndujella, a custom-made mortadella infused with Calabrian chilli paste. Given d’Elia also runs a pasticceria in Alexandria, it makes sense that you can finish with a platter of mini pastries, little lobster tails, mini maritozzo and baby baba al rum included.
