The bargain retailer has launched a new Wellness Wednesdays initiative for Lidl Plus users, offering 10 per cent off products in the Live Well range every Wednesday. As part of this, they’ve also teamed up with chef Miguel Barclay, the creator of the One Pound Meals series, to create seven new recipes, which all cost £1 or less per serving. Miguel’s recipes highlight how easy it is to create healthier, balanced meals, without spending a fortune – as nearly 45 per cent of Brits say cost makes it harder to make healthier food choices. One of the recipes, for a Chicken Kra Pow stir fry and Cauliflower Rice, is packed with protein (23.8g) and comes in at under 300 calories. Chicken Kra Pow & Cauliflower Rice Recipe (£1) Serves 1, prep time 10 mins, cooking time 20 mins. Kcal = 296Kcal, Protein = 23.8g, Fat = 15.2g, Fibre = 4.8g Ingredients: ¼ cauliflower – part of the Live Well range 2 x 5ml sesame oil 80g chicken drum fillets (finely chopped) 1 garlic clove (finely diced) ½ fresh red chilli (sliced) 17g green beans (quartered) 7g fresh basil 5ml soy sauce 2 pinches salt 1 pinch pepper Method: Blitz the cauliflower in a food processor by pulsing until it resembles rice. Then pan fry over a medium heat in a splash of sesame oil for about 8 minutes until tender and cooked. Meanwhile, chop the chicken into very small pieces, season with salt and pepper, then pan fry with garlic, chilli and green beans in a splash of sesame oil over a medium heat for about 10 minutes until cooked through.
