You don’t need to make it today — just slice and freeze the berries so they are ready to use when you want. JUST DESSERTS: Soft strawberries turn a cake or dessert into something special. Most read in Money Think strawberry and banana muffins, oaty cookies with tasty bits of berry, or a trusty Eton Mess. The clue is in the name — slightly squashed berries are all part of the cream and meringue mix. IN A JAM: If a punnet of strawberries needs to be eaten, make a quick batch of jam. Unless you put it in sterilised jars, keep it in the fridge and eat within a few days. Boil up the berries with an equal weight of sugar, and a squeeze of lemon juice, for around 20 minutes. TOP FOR TIPPLES: Strawberries are a must-have in Pimm’s, and for a strawberry prosecco crush the berries with a dash of lemon juice and pinch of sugar, then top with bubbles. Try putting slices of strawberry and cucumber into a jug of water and chilling, or crush strawberries with mint leaves and add to sparking water. BERRIES BEWARE: If strawberries are soft, wrinkled or slightly bruised, they’re usually still fine to use in these different ways.
