This is the most polished steak restaurant in the City of Fairfield, and there’s the fire, on your left as you walk through the dining room, the room dressed in glass and faux fur and leather. The finesse? Leave it to chef Dany Karam, who obsesses over his beef, each cut handled and dry-aged in house. Blackmore wagyu is the headline act, but pick the Speckle Park striploin served on the bone and it’s nicely crusted over flame, full-flavoured and blush-pink in the centre. A shell filled with spanner crab meat poached in olive oil is another precise plate, set down with a pot of dashi cream and warm brioche. Yes, it might take three goes to clarify your martini order, but the general air on the floor is of a team eager to please, and there’s no denying the value – or breadth – of the wine list. Red hot. If only the glow of the nearby gaming floor wasn’t so prominent. Good to know: Main courses come with three sides for $38 – don’t skip the charred creamed corn capped with crisp shallots.Good Food reviews are booked anonymously and paid independently.
